One of the sad things about catching some of my favorite chefs on Foodtv is that you can't always get the recipe.
Today, Giada De Laurentiis on Everyday Italian made a fantastic looking roasted eggplant, garlic & cherry tomato pasta. And the truth is, one probably doesn't really need a recipe for it.
She roasted the veggies with a little olive oil, salt & pepper and 1 tsp of red chili pepper flakes at 400F/200C until the tomatoes started to split and the eggplant cubes were soft. I came in late, so I'm not sure about the timing, probably about 30 minutes or so. Then she pulsed it all in a food processor with a small bunch of fresh mint, tossed it with cooked rigatoni and grated some Parmesan over top.
Delicioso...but still...what if I only showed up in the last five minutes? What if someone else just told me about it? Wouldn't it be nice if we could actually get a recipe?
Anyway, enough whining and the dish did look awesome...Wow, I just found the recipe here on food network. com
