Once Again...Pasta & Sauce Ratios


Back in October 2007, Mark Bittman wrote about changing his perspective on the ratio of pasta to sauce. He used to follow the mantra of more pasta to sauce, but times have changed. Frankly, even as a girl, I loved spaghetti with meat sauce...or should I say tons of meat sauce with some spaghetti. So glad to know I'm now cool.

In the link to Mark's video and NY Times article, there are three very delicious pastas...one with chickpeas & chorizo with bread crumbs, another with winter squash and tomatoes, and the third with green beans and tofu sticks.

After reading his article then, I wrote my own take and tried his chickpea & chorizo...one word...AWESOME.

Of course, Mario Batali has the opposite take on ratios..."...sauce is just a condiment. It should never be soup." I couldn't leave you without some of his recipes, so you can make up your own mind.

So...what's your point of view when it comes to pasta/sauce ratio?

Gluten Free Pasta

I've been asking for ideas for articles for Presto Pasta Nights. And to date, I've received a couple of great requests.

The first was for video demonstrations to make our own pasta. And although there seem to be lots of choices when you do a Google search, but I really didn't find too many that I wanted to share...so I shared a few I found helpful.

Another request was for gluten free pasta making...again, a challenge, although there are now lots of packaged gluten-free pastas out there these days. But I visited my favorite gluten free blogger Shauna of Gluten Free Girl and found an old recipe of hers for Homemade Gluten Free Ravioli with Spinach, Potato & Goat Cheese filling that sounds divine even for those of us who are lucky enough not to have allergies or celiac disease.

If you know of any other great links to help those with food related diseases or allergies, leave a comment or email me with ideas and I'll share them with everyone.
